Pears are a delicious and widely available British winter fruit and they make the perfect base for this simple tasty dessert. With only four ingredients, and taking just a few minutes to prepare, poached pears couldn’t be easier to make! The ginger and cinnamon give a delicious warming spiced flavour but this works well with a variety of sweet spices such as star anise, cardamom and cloves.
I love to serve with a dollop of crème fraiche, or luxury vanilla ice cream is perfect if you want to be a little more decedent!

Prep time: 10 minutes + 10 minutes at the end, cook time: 45 minutes
100ml maple syrup
1 stick of cinnamon
1 thumb of fresh ginger (5-10g)
Peel the pears but leave the core intact. Peel the ginger and finely dice.
Put everything into a saucepan over a low to medium heat and cover. Leave to simmer for 45 minutes (turn the heat down if the liquid goes beyond a very gentle simmer), turning the pears every 15 minutes to ensure they cook through.
Remove the pears and set aside. Boil the liquid over a high heat, uncovered so that it reduces by approximately half. It should take 5 to 10 minutes.
Serve the pears with the syrup poured over, but ensure it has a few minutes to cool when you take it off the heat.
