Comfortingly warm and filling, but also a great healthy option for a dessert, baked apples are a winter favourite. Serve with crème fraiche, oat cream or for a treat, rich vanilla ice-cream.

Serves 4
4 cooking apples
100g mixed dried fruit
½ tsp star anise
2 tblsp maple syrup
1 tsp lemon juice
1 tblsp ginger cordial (optional)

Mix together the dried fruit, lemon juice, 1 tblsp maple syrup and the ginger cordial and leave to soak for at least one hour.

Preheat oven to 170C.

Core the apples and place in a foil covered ovenproof dish. Put the dried fruit in the core holes and round the apples. Drizzle over another spoonful of maple syrup.

Bake for 40 minutes.

For an extra treat make some butterscotch sauce to pour over (not dairy free or plant based). Once the apples are cooked, heat 20g of butter and 2 tblsp maple syrup in a small saucepan. Bring to a boil and allow to bubble for 5 minutes without stirring. Take off the heat and poor immediately over the individual apples ready to serve.
