Usually I’m very healthy at breakfast, it feels important to start the day well! But sometimes at the weekend I like a treat and these muffins are a perfect solution. As the sweetness comes from the apple and maple syrup, they are a relatively healthy option. They are also super quick and easy to make! I use a freestanding electric mixer, but if you don’t have one, good old arm muscle will do just as well.
Makes 12 muffins
200g peeled, cored and grated apple
100ml coconut oil (make sure it is liquid)
100ml maple syrup
½ tsp vanilla essence
200g self raising flour
50g oat bran plus a little extra for the top
1 tsp baking powder
1 tsp cinnamon
200ml plant based or dairy milk (I usually use almond milk for this recipe)
Preheat the oven to 175C.
Mix together the maple syrup and coconut oil in a freestanding mixer or by hand. Beat in the eggs one at a time. Add the vanilla essence and bran, then sieve in the cinnamon, baking powder and flour. Mix together until combined then slowly add the milk until you have a runny, smooth mixture.
Fold in the grated apple then divide between 12 muffin cases (fill each case to about ¾ full). Sprinkle a little extra bran over each muffin or top with a thin slice of apple, then bake for around 30 minutes. The muffins should spring back when pressed lightly and a skewer should come out clean when inserted for a few seconds.
Leave on a wire rack to cool before enjoying with a nice cuppa!
