This is a favourite quick lunch, perfect both for me and my young son. If you use quick polenta, it literally takes a couple of minutes to cook, and you can top with whatever you have to hand! Try a mix of vegetables and a poached egg, or top with a piece of grilled chicken or salmon. A well rounded meal that everyone will love!

Grate the cheese and set aside. Slice the vegetables (into strips where appropriate) and steam or stir fry for a few minutes until cooked to your liking.
Put 480ml of water in a pan and bring to the boil. Pour in the polenta, stirring as you go. As it starts to thicken, add the grated cheese and continue to stir until thick – it will only take a minute or two. Remove from the heat and divide between two bowls. Top with your vegetables and enjoy! A little drizzle of toasted sesame oil and some freshly ground black pepper finish it off perfectly.
This is also delicious topped with an egg or a fillet of grilled tofu, fish or chicken to include a portion of protein.
